Easy Delicious Holiday Dishes

Food, has always been a staple in Holiday traditions for all cultures. It’s always nice to have the traditional dishes, but adding a new element to your dinner table will always be a hit. Who knows? You may even have a new family food tradition!

Here are a few easy, and delicious new recipes that I’ve tried and loved too much to not share! Comment with your own favorites for everyone to try!

 

Pumpkin Biscuits

This delicious biscuits are perfect for any occasion! Serve them with honey butter, or serve them with a cinnamon sugar, butter mix (just blend all three together to taste). Have them with dinner, or as a desert!

 

Total Prep/Bake Time: 35 mins.

2 1/4 cup white whole wheat flour

2 Tbsp. maple sugar or light brown sugar

1 Tbsp. baking powder

I tsp. kosher salt

1/2 cup (one stick) unsalted butter (cubed)

1 cup canned pumpkin puree (your favorite brand)

3/4 cup buttermilk

1 Tbsp. unsalted butter, melted

flaked sea salt (optional)

honey butter (optional)

 

  1. Preheat oven to 450 degrees Fahrenheit. Whisk together flour, maple sugar, baking powder, and salt. Sprinkle cubed butter throughout. Cut in butter until mixture is course and small, with a few pea-sized pieces.
  2. Mix pumpkin and buttermilk in a separate bowl, then slowly add it to the first mixture in step 1. Stir until a soft dough forms. Place onto a floured surface, make into a 1-inch thick round. Using a 2-inch round cutter, stamp out the biscuits, and repeat with scraps. Arrange on a non-greased baking sheet, brush with melted butter and/or sea salt flakes (optional).
  3. Bake 12-15 minutes or until golden brown on center oven rack. Serve warm or room temperature with honey butter or anything else you’d like!

Roasted Red Potatoes with Bacon, Green Onions and Cheddar

These potatoes are sooo delicious, and sooo simple! Our family loves having them as a side to any dinner. They enjoy a dollop of sour cream with them as well!

 

Total Prep/Cook Time: 70 mins

8 green onions

3 lbs red potatoes (cut into 1-inch pieces)

1/4 cup extra virgin olive oil

1 cup shredded cheddar cheese

 

6 strips bacon (cooked, crispy, crumbled)

 

  1. Preheat oven to 400 degrees Fahrenheit. Separate dark green tops from light green and white parts of the green onions. Keep the light and white parts whole. Thinly slice the dark green sections until you have 1/2 cup, set aside.
  2. In a large bowl combine potatoes, unchopped light and white sections of green onions, olive oil, and season with salt and pepper. Spread in a single-layer on a baking pan or sheet. Roast 30-40 minutes or until golden brown and tender. Stir halfway through.
  3. Transfer roasted green onion sections, thinly slice and return to bowl with the potatoes. Sprinkle crumbled bacon, and cheddar cheese on top while still hot to help cheese melt. Easy!

Does bullying start younger than we think?

When I got the message, I did everything to try and keep my cool…

About 2 hours into studying for my Discrete Math final, I got a message from my daughter’s teacher about being scratched by another student…….ok what?! The rational mom in me said ” its ok, im sure it was an accident.” But the irrational mom in me says “who was it? who are their parents and where do they live?!”
I’ve come to realize thats its really hard dealing with these types of situations. My daughter is only in 1st grade, and already issues are arising. I can only imagine the years to come!

I decided to keep my cool. We spoke with the vice principal and addressed it calmly and firmly, but what next? I don’t want this accident to potentially become a more severe one in the future.

I feel that sometimes children at school are dealing with problems at home and the only outlet is school. These types of behavior and acting out unfortunately affects other students and their education. The dilemma is how do we teach our children to deal with these said issues?

I think first, we should give them open forums for communication and demonstrating feelings. If a child feels attention and love,  they won’t need to seek it from another potentially negative source. Let your child tell you about their day, or who they played with a recess. This will help them express emotions in a positive way.

Prepare your child for the world. Introduce the world to them as you would have liked to be. Just make sure that once they are old enough to go to school, they understand all the potential scenarios they may have to deal with.

We teach our daughter that she can only control what she does, and nobody else. But this situation has us thinking differently now. What if a bully doesn’t stop? What are the limits? This is ONE isolated situation, but will it continue with her, or another child? So we had a long talk with her and decided the best option would be to speak up! Make yourself heard! This draws attention, and its harmless. This is just a diversion for resolution. At school, there is always a teacher or administrator nearby, so this should help to at least be a diversion.

In conclusion, if we all do a better job of being there for our children, and preparing them for the world, it will become a better place for everyone 🙂

Holiday Decorating Tips

Holiday Decorating can be overwhelming, especially when you’re a busy mom. Here are a few tips to help make your holiday decorating merry, and stress-free.

Where to start? It’s hard to decide sometimes, but just go with it! Put on a little holiday music, and get in the zone…

Knick-Knacks/Ornaments:

I like to start with knick-knacks. We all have em’, we all love em’! Lay them all around in whatever fashion you’d like. That old Santa that grandma gave you years ago, or Remember, less is more. Here are a few photos of some favorites in our home…

Garland:

Garland is essential to any holiday decor scheme! There’s no right or wrong way to use garland. Drape it, bunch, hang it or twist it around anything you’d like! I like it the best draped on mirrors, mantles, wall sconces or windows and door frames.

Lights:

Lights, lights, lights! My favorite aspect of decorating is putting up the lights. Everyone has their own color scheme they like best, but I prefer white or multicolored. I can never decide which one to put up, so I’ve been putting up both for many years now! My favorite place is to put the lights around door frames or windows. But sometimes I’ll wrap some around a floor lamp, around the large wall mirror, or drape them sporadically around the house.

Extra: Tiny Holiday Village:

A tradition of ours has continued for at least 10 years now in our house. It began when I was younger; helping my dad decorate the house for Christmas. My brother’s and sister, and I would create our own tiny holiday village. With light up houses, storefronts, foliage, and little people going about their business. I’ve carried on the tradition with my own family, and to this day we enjoy building it, as well as enjoying the spectacle for years to come!

HOW TO: Fixing Broken Holiday Light Bulbs

If there’s one thing that drives me crazy, it’s having a set of lights stop working in the middle of my holiday decorating.

I’ve been decorating for the holidays for a long time now, and there are certain things that I’ve learned over years of experience (and not always the easy way haha). This should at least help you fix a few of those pesky lights before you toss em!

Step 1: Check to see if any of the bulbs are either missing, broken, or visually burnt out. If the bulb is burnt out, it will have a blackish colored ring around it, or the fuse in the bulb will be disconnected. Replace broken, or missing bulbs.

Step 2: Check the wiring. Make sure that wiring hasn’t been damaged or compromised. If wiring is visible, there may be a good chance its been damaged.

Step 3: Replace the fuse. Look on the plug and you will notice there’s a small compartment that can be opened to replace the fuse. It’s best to use a screwdriver or other tool to open it.

If all of these steps don’t fix your problem, it may be time for a new set of Christmas lights. Luckily they’re fairly inexpensive, but maybe that’s why we’re having these issues to begin with!

Its that time of year again…

I woke up this morning and realized…OMG it’s December 1st! Do you know what this means?! Christmas is less than 25 days away ALREADY!

No matter how long in advance we prepare, there never seems to be enough time to get everything done. Let’s be honest, it’s ALOT for anyone to handle; let alone a mom whose already busy enough. First it starts with Halloween, then Thanksgiving, and BAM here comes Christmas! Just when you think you’re ahead of the game, you’re behind lol.

As a busy mom I feel the need to share anything/everything to help other parents who may need a little help or inspiration. So I will be starting out this blog with helpful holiday hints for everyone! Starting first with a how-to guide on fixing those pesky broken Christmas light bulbs! HAPPY HOLIDAYS!!
